Turn any steak ( chicken, pork, burgers, even fish)  dinner into an elegant affair with Sauteed Sherry Mushrooms. This gourmet treat is much easier than you’d think ! A few basic ingredients, some cooking sherry, and a little of your time and
these delicious mushrooms can be on your dinner table delighting you and your guests.

 

What You Will Need:
6 cups of your favorite mushrooms, sliced and washed.
3 shallots peeled and thinly sliced.
1/ cup of cooking sherry.
2 tablespoons of of fresh thyme leaves – stripped off the stem.
6 tablespoons of olive oil.
2 tablespoons of butter.
Dash of salt and cracked black pepper.
On medium heat, caramelize the shallots in 2 tablespoons of olive oil. Remove form saute pan and add the remaining 4 tablespoons of olive oil. Stir in the mushrooms and cook over medium heat until all moisture is evaporated and mushrooms are sizzling.
This will take up to 15 minutes. When all moisture/liquid is gone from the mushrooms and pan, add the sherry, sliced shallots, and thyme. Continue to cook over the medium heat until the sherry has evaporated from the pan. Add the 2 tablespoons of butter to glaze the mushrooms just until they again sizzle. Remove from heat, add dash of salt and pepper to taste, and serve!
