Baked Greek Chicken Dinner with Feta Cheese and Black Olives is an amazingly healthy and tasty way to eat well. It is also a keto diet recipe.

Baked Greek Chicken Recipe – A Keto Friendly Recipe

Marinade / Coating for chicken

1 and 1/2 – 2 lbs of chicken ( 6 large chicken breast pieces)
1 cup of plain Greek yogurt ( not sweetened)
3 tablespoons of organic olive oil
6 cloves garlic ( crushed) or two tablespoons of pre-minced garlic
4 tablespoons of lemon juice plus zest  (about 2 lemons)
1/2 teaspoon of kosher salt
1/8 teaspoon of red pepper flakes
1/4 of a cup of fresh finely chopped oregano or 1/3 cup dried
1/4 cup fresh chopped parsley
1 teaspoon black ground pepper

Topping
1 cup of sun dried tomato – basil feta cheese ( crumbled)
1/2 cup of sliced black olives ( optional)

In a large mixing bowl, mix all marinade ingredients together to make the marinade, it will be thick. Place chicken breast in to marinade and roll them to make sure they are coated. leave all chicken in the bowl to marinate a minimum of 30 minutes, an hour is better!

Preheat oven to 375.

Place coated chicken breast pieces side by side in 13 x 9 glass baking dish. Do not wipe off marinade – you want the pieces well coated.
bake for one hour or until the chicken registers 165 degrees.

The chicken will be turning golden at about 40 minutes… this is when you want to sprinkle the feta evenly over the chicken followed by the sliced black olives.  The feta will will roast along with the chicken to completion.
