There is nothing like the taste of authentic cheese enchiladas with red sauce. This authentic Mexican food recipe is one carried down through my family in Texas…delicious and easily my favorite! Low carb and gluten free too at only 65 calories an enchilada! Now the recipe is yours to enjoy with your friends and family.

What you need and How To:
Oven at 350 degrees

12 – 20 corn tortillas
2 cups red enchilada sauce ( hot or mild) warmed to a boil
4 cups white Mexican Melting Cheese
2 cups of shredded sharp cheddar cheese
1 cup of finely chopped green onions ( optional)
1 cup of White Mexican crumbling cheese
10 ox or more container of Mexican style Crema.

Reserve 1/4 cup onions, 1/2 cup of sauce, 1/2 cup of Mexican Crumbling cheese. You will use this for garnish before serving.

Dip each tortilla in sauce for 10 seconds to coat and soften…this will help with breakage.

Fill and roll each tortilla with about two heaping tablespoons of cheese mixture and sprinkle with onions. Roll and put in oi coated glass dish seam down. Fill pan – usually about 12 enchiladas.

Cover enchiladas with sauce, sprinkle top with a light coating of cheese mixture and bake 15-20 minutes or until cheese is melted ….DO NOT OVER BAKE!

Garnish with sauce, crumble cheese, crema, and onions. ENJOY!
